The beauty of bakeries is that they can take on a thousand forms, from the modern bakery with multiple outlets scattered throughout the territory to the bakery born mainly to see its grains take shape and taste. This is the beauty of the ovens selected by the Pane e Panettieri d'Italia 2023 guide. Here are the best ones in Trento and its surroundings.

The Best Bakeries in Trento and Province

Il Forno dei Sapori

Laboratory with a minimalistic layout expressing Maurizio Piller's desire to get straight to the point. Piller is a passionate baker who has abandoned the world of renowned kitchens for that of leavened products. On the counter, you'll find pastries and pizzas, while on the shelf, there are various types of bread (better to reserve) made with sourdough or beer yeast and different flours. The desire to experiment and try new tastes is the lifeblood of his work; the production calendar is available online. The oat bread or multigrain (available in large sizes) is very good; also interesting is the whole wheat spaccatina, a daily bread around here, enhanced in taste. The tray pizza is crispy and tasty. Pastry is on the rise, with well-balanced sweets in various cake and tart variations, as well as new proposals for modern pastry (single portions and cream tarts). Courteous but somewhat slow service.

Panperfocaccia

Shop with a visible laboratory, a small counter dedicated to sweets and focaccias, and a limited but interesting bread selection (reservation is recommended to find what you're looking for). On the shelf, there are also products from local farms and flours from local farmers. The bread has long leavenings and is very light and digestible; interesting doughs with local flours. Also worth mentioning are the corn turtles and the focaccia, very tall, flavored with excellent extra virgin olive oil. There are also tray pizza, long and thin breadsticks, and, in some periods, fresh pasta. Sweets are very good, genuine, and balanced: sweet bread, muffins, or tarts. Courteous and helpful service.

Pane Al Pane - Panificio Marchi

Small artisanal bakery serving the surroundings of Centa San Nicolò and some retailers in Trento and the province. Baking takes place during the day, with sourdough and stone-ground flours; the technique recalls the bread of Southern Italy, very leavened and soft, with large cavities and a crispy crust. The loaves reach two kilograms, and the types vary depending on the day of the week, except for the always present durum wheat bread, which keeps well for several days. The pastry production is limited to sweet focaccias, in addition to large leavened products for holidays. Courteous staff; it is advisable to reserve the products.

Panificio Bellotti

A bakery revived by the passion of Matteo, the third generation, a baker and farmer curious about everything that ends up as an ingredient in his doughs, starting with stone-ground flours. He is the one who introduced the use of the wood oven and the opening - for some years now - of a small bistro in via Cesare Battisti, 137 (which also includes ice cream in the summer). The small shop next to the oven is welcoming, with essential furnishings that enhance the product. About ten types of bread, all with semi-whole or whole flours, including filoncini, turtles, spaccatine; as well as naturally leavened loaves and wood-fired bread. There are also focaccias (with tomatoes and olives) or tray pizza (Margherita), and a small selection of sweets, including strudel, tarts, and leavened products of their own production. On the shelf, products from local farms.

Panificio Moderno

The quality of all products is high and with attention to the supply chain. On the shelves, more than forty different variations, ranging from the classic Trentino spaccatina to large naturally leavened loaves with traceable flours, expertly kneaded, fragrant, and full of taste, with crispy crusts that last over time. The types leavened with starter or brewer's yeast are not inferior, such as ciabatta (in two sizes) or hamburger bread with dense crumb and covered with sesame seeds. Also, try the tray pizza and focaccia with various fillings. On the sweet side, there are excellent croissants, oven-baked cakes, Venetian pastries, and other sweet snacks. Selection of biscuits and products from local companies. Other retailers in Trento and Rovereto, some with a cafeteria and kitchen. Prepared and very fast staff.

Panificio Zanoner

A well-known brand with over a hundred years and several generations of bakers, appreciated by tourists and locals. The offering is very wide, with variations from Trentino and South Tyrolean recipes, as well as some Venetian influence, thanks to the strong exchange between the valleys. More than twenty types of bread, including the black cumin seed bread, soft and spicy, or the spaccatina, a classic Trentino bread. Moving on to the savory side, there are breadsticks, focaccia (with salt or olives), and tray pizza (a couple of flavors available). There is also a wide range of sweets, with about ten different cakes, including Linzer tart and peach cake; available krapfen, croissants, and a wide assortment of biscuits.

Dal Gran al Pan

A united and passionate family has led to the evolution of this small mountain bakery, which is also a farm that cultivates and grinds its own flours. The bread and sweets produced are found here and in the farmer's markets of Predazzo, Riva del Garda, Rovereto, and Trento. Production is limited and mostly includes medium-sized breads, as well as some small loaves enriched with seeds or dried fruit. Excellent are the Garda olive and walnut bread, flavorful and soft both inside and in the crust. Pastry production is growing, with sweets for breakfast and cakes. Available biscuits, snacks, and all their flours. Courteous and attentive service.

Panificio Sosi

A historic sign in the city with more than a dozen stores besides the historic one, mostly renovated in recent years (some with a cafeteria) and all with fast service. Very wide range: from bread, to savory, to sweet, to packaged products and holiday sweets. More than thirty types of bread, mostly in small format and with semi-whole flours and brewer's yeast; standouts include PanTrentino, with local flours and sourdough, and potato bread, soft and tasty. The pizza is tray or paddle (with several flavors available), and breadsticks and focaccias complete the savory offer. Breakfast sweets available until the evening, as well as some fresh pastries (especially fruit tartlets) and leavened sweets like Brazadèl. Excellent grostoli - one of the few that produces them in the area - crispy and light.

Forno Urbano

A project born from three friends (two engineers and a graphic designer) that includes a small laboratory in the city center, where bread and pizza are baked. The former is present on the shelf with a few types, all in large format (the baguette is the only exception) with a weekly calendar that changes during the year. The doughs are well leavened with a well-cooked and crispy crust. Pizza and focaccia are available with various fillings and combinations that enhance the territory. Long leavenings give lightness to a dough that crackles in the mouth. Sweets complete the offer: brownies or sweet focaccia with chocolate chips. Selection of beers and craft drinks; service is somewhat slow.

Tecchiolli

A family-run bakery. The venue has somewhat dated furnishings and an offer like a minimarket but offers excellent bread, also available in other stores listed on the website. A proposal with about ten types: ciabatta and tartaruga are great classics, as well as olive bread (derived from olives), or Valle dei Laghi loaf with Garda oil and their own production flours (they have an internal mill and source the rest from local farmers). Soft focaccias accompany tray pizza and packs of breadsticks. The sweet offer is growing, with some new cakes like pear and chocolate, or walnut and honey; also evolving fresh pastry.
