It happens to everyone sooner or later, even to the most hardened ecologists: fruit ripens quickly and, without realizing it, there we end up with a completely dark and springy banana. But don't panic, because nothing is wasted in the kitchen, and what looks like waste on the surface can make for a delicious dish. A dessert, in this case, perfect for breakfast: arm yourself with maple syrup, it's time to make banana pancakes.

Banana pancakes recipe
Ingredients
1 ripe banana
100 g flour
1 teaspoon baking powder
1 pinch of salt
70 ml milk
Cinnamon (optional)
Butter
Mash the banana with a fork and mix well until creamy in consistency. Add the flour, baking powder, a pinch of salt (a little cinnamon powder if you like) and mix everything together. Add the milk (for a vegan version, plant-based drinks are also fine) and mix, helping yourself with a whisk or fork. Heat a knob of butter in a nonstick frying pan, then pat dry with paper towels: scoop out the mixture with a ladle and pour into the pan, letting it cook for a few minutes over medium heat. As soon as bubbles form on the surface, it is time to flip the pancake to the other side. Proceed by cooking one ladleful of batter at a time, then serve with some maple syrup or honey, fresh or dried fruit.
