When he left Copenhagen, it was a jolt, because Riccardo Canella seemed by now completely immersed in the Noma world. Intern, head chef, sous chef: after 7 years in one of the world's most influential restaurants, the decision to change felt like an earthquake.  In the way was also the pandemic, so the desire to return home got the better of him. And to bring the cook to the lagoon was the proposal of Cipriani, a name that has the weight of a legend around the world. So in 2022 (a golden year for fine dining in the city) Riccardo Canella took a seat in the kitchen of Hotel Cipriani, A Belmond Hotel, Venice, and the main restaurant Oro.

In one year he has made the city's history and traditions its own, but he has also immersed himself in today's reality, in a gastronomic scene that is experiencing a moment of full revival (which does not stop only in the Venetian capital but affects the entire coastline) despite the problems related to too much tourism, divided as it is between bacari, historic cafes, local cuisine signs, great restaurants and new realities that know how to reinterpret with great charisma the contamination, which is also an integral part of the Serenissima. We asked him for five tips in order to eat in the city during the Venice International Film Festival, which also inspired special dishes for the occasion.
