With Lombardy leading in the number of award-winners, followed by Lazio, here are all the venues that have received Tre Forchette — the highest recognition — in the new edition of the Ristoranti d’Italia guide by Gambero Rosso

The Ristoranti d’Italia 2026 guide by Gambero Rosso, presented in Rome at The Space Cinema Moderno during the award ceremony, as always is not just a list of addresses but a journey through the regions, taking the reader by the hand to discover the flavours of Italy. And what emerges this year is an Italy in splendid form, considering that the country’s top establishments number 2,580 — 100 more than last year — between confirmations and new entries (a remarkable 382).

For the first time, we have given space to agriturismi, which can conceal great trattorias as well as unexpected fine dining venues or bistros. And we have crossed borders with a section dedicated to Italian dining abroad. Because sometimes, you need to step outside to understand yourself better.

The Tre Forchette restaurants: between confirmations and new entries

This year, 55 venues have been awarded Tre Forchette (three more than last year), with five new entries. Of these, two are in Lombardy: Contrada Bricconi (last year we interviewed founder Giacomo Perletti about rising prices) with Michele Lazzarini, a pupil of Norbert Niederkofler, who has brought back to life a 15th-century hamlet in Val Seriana; and Il Luogo Aimo e Nadia — just days after the passing of Aimo Moroni, one of the chefs who wrote part of the history of Italian cuisine — returns with the solidity of those who never stopped.

In Rome, Zia, led by Antonio Ziantoni, trained under Anthony Genovese, reaches the milestone with refined and contemporary cuisine; Marotta, in Alto Casertano, brings haute cuisine to a region that until recently seemed far removed from such scenarios, after the chef’s experience at Crippa’s school. Finally, Villa Maiella, which sees its great family journey finally recognised.

At the very top of our ranking, with a score of 97/100, we find: Enrico Crippa with Piazza Duomo in Alba (CN);

They are the three current champions of Italian cuisine because — though very different from one another — they embody the spirit of today’s “high” fine dining: relentless and continuous experimentation, pursuit of essentiality, the ability to take you out of your comfort zone and to create indelible memories. These are the so-called “experiences.”

Just like those to be had in the remaining 52 award-winning restaurants, a diverse line-up that includes great family stories (from the Santinis of Dal Pescatore in Canneto sull’Oglio to the Iaccarinos of Don Alfonso, and the new entry Tinari family of Villa Maiella in Guardiagrele), brilliant free spirits like Alberto Gipponi of Dina in Gussago, Franciacorta, as well as enlightened farming enterprises (such as the aforementioned Contrada Bricconi in Oltressenda Alta, one of the two new Lombardy entries).
