In 1871 Innsbruck Regional Diet acquired the monastery that is now home to the school and its estate, converting it into a school with a station for agricultural trials. Today, apart from teaching, the Foundation boasts 120 hectares of vines and apple orchards, a winery and a distillery. True to tradition the institute produces grappa with a discontinuous double-boiler still and creates a dozen monovarietals as well as the famous Castel San Michele grappa blend of two different grape varieties.
