The SS133 is the road that connects Palau to Santa Teresa di Gallura. On both sides of the tarmac, Mediterranean scrubland abounds, alternating with neat vineyards and the inevitable granite rocks which, at sunset, truly seem to turn pink. Just a few minutes from Palau you reach the hamlet of Petra Bianca. Only a few hundred metres and you already understand what we are talking about. The view is priceless: the valley of vineyards, the northern coast of Sardinia and Corsica, which feels almost within reach. Only eight rooms, no desire to show off, no wish to flaunt luxuries that have little to do with the authenticity of the place. Here you find the necessary comforts, the right furnishings, the details that make you feel good, and the silence of the location, interrupted only by the sounds of nature.
What is produced and what is served
Petra Bianca is first and foremost a farm and wine estate. The first vineyard was planted in 2015, just over five hectares, with another five subsequently added. But beyond the vines there are fruit trees – apricots, plums and peaches, citrus fruits, olives and several vegetable gardens. There is also a chicken coop with twelve hens, ensuring fresh eggs every morning. In addition to breakfast, the estate organises vineyard aperitifs with cured meats and cheeses from small local producers, various tastings, yoga classes and wellness-focused gatherings.
In the evening, it opens for dinner, also welcoming guests who are not staying overnight. The menu is exactly what you would hope to find in such a place: a few dishes (two starters, two first courses, two mains and one dessert) and a four-course tasting menu. The roast beef of young Sardinian beef is delicious; the fregula with tomato variations and ewe’s milk robiola is a very fresh yet flavoursome dish; the parmigiana in Sardinia is something you could happily eat every day: a tasty fried aubergine croquette in a carasau bread crust, served on a roasted aubergine cream. The dessert is no less impressive: frozen nougat with saffron pears and crumbled Sardinian amaretti.
The estate’s wines to pair
But what strikes you is not only the sheer goodness of the dishes, which is guaranteed. It is a tale of Sardinia that is both traditional and contemporary, an exaltation of ingredients through flawless cooking, without unnecessary embellishment. To pair, of course, are the estate’s honest wines, the fruit of natural production respectful of the surrounding environment. The Cannonau di Sardegna is fresh, elegant and supple, just as a great Cannonau should be; the Vermentino di Gallura is offered in several versions, all of which express the granitic soul of this corner of Sardinia. There is also space for a Vermentino born of careful maceration and a rosé to be drunk strictly as the sun disappears before you, swallowed by the sea.
