This zampone sausage sees artisan techniques combine with select Caserta and Apulo Calabrese pork finely minced and seasoned with a mix of aromatic herbs, natural spices and fleur de sel. Complex aromas of wine, garlic and spices all blend nicely with excellent quality meat. Firm and finely ground, the filling includes pieces of rind, chunks rich in collagen, and nice, clean fat, making for a juicy morsel that melts in your mouth. Hard, supple casing with slightly smoky notes.
