Description
Varzi Dop sausages, both the Sottocrespone and Filzettone types, clock in at about 1 kg. They're made with prized pork meat, mostly thigh, minced coarsely (to limit the amount of fat) and aged for at least 2 months. When sliced, characteristic aromas of fresh salami emerge: meat, fine pepper, garlic, wine, hazelnut and above all smoke, mold and cellar. Balanced and highly enjoyable flavor.
