Vecchio Varzi

Description

Hailing from a long tradition dating back to the early Middle Ages, Vecchio Varzi was founded by the Montagna family in 1974 in the Varzi town center (though the Montagnas later moved production to the outskirts of the village with a view to improving their facilities). Despite a desire to modernize, the family never lost their ancient "know-how" - the meat aging rooms, for example, were built in brick, just like the old cellars. Today about a third of their PDO-designated products are made here. In addition to Varzi salami, their loin "al Pinot" is delicious, as is their cotechino, lardo di spallone, juniper pancetta and Guanciale Pepato.
