Vecchio Varzi

Description

The cured meat factory was founded in the heart of the village of Varzi in 1974, heir to a tradition of pork butchering that dates back to the early Middle Ages. Pig farming in the Staffora Valley was practiced as far back as the ancient Romans, as evidenced by some decorations. In the early 2000s, the cured meat factory moved to the outskirts of the village to expand and acquire modern facilities. It is now celebrating its 50th anniversary, always with an eye to tradition and the preservation of ancient know-how: the curing rooms, for example, are made of bricks to recreate the atmosphere and climate of the old local cellars.
