Carciofini in olio evo


Their artichokes are Italian (mostly from Puglia) and are preserved in according to artisanal methods, using only a few ingredients: wine vinegar, salt and extra virgin olive oil. To the eye they're rustic but clean. The right amount of oil has been used. To the bite they're moderately firm - soft but not mushy. Aromatically they're delicate and multifaceted: notes of vinegar meet hints of wine, but there are also vegetal whiffs of the artichoke itself, with its strong and gentle sweet/bitter fragrances and trademark light astringency. Perfect savoriness, persistence, cleanness and precision on the finish.
