A complex product of great expressive power, lightly smoked using wood from the fragno tree (a local oak). Aromatically it evokes whiffs of spices, smoke, underbrush, Mediterranean scrub, cooked must and charcuterie caves, while in the mouth it's savory but also sweet, lingering, revealing character in a slightly persistent profile.
