The Sofia, a Langhe chardonnay of disarming complexity, is dedicated to Beppe Caviolas daughter Sofia and his wife Simonetta. Fermentation takes place in new and used barriques and tonneaux, yielding a wine that crackles with energy from the very first aromas. Subtle hints of butter, flint, yellow fruit, and candied lemon peel mark the nose, while the palate is fine, elegant, and sapid, with freshness providing the perfect counterpoint to a rich yet graceful texture.
