Giuseppe Pagano is behind numerous projects, from agriculture to gastronomy, and of course, wine. San Salvatore 1988 encapsulates a part of this vision. While wine production focuses on fiano, greco, falanghina, and aglianico, the enterprise also includes buffalo farming, mozzarella, olive groves, and even a restaurant, all operating under a guiding principle of environmental respect. Few times have we encountered such a well-balanced Pian di Stio. This 2022 Fiano graces the glass with aromas of lemon jelly, Mediterranean herbs, yellow flowers, and powdered sugar. It's juicy in the mouth, with nice fleshiness, not overly complex but fragrant and flavorful. The Jungano, an Aglianico, features sweet berry aromas and close-knit tannins that slightly stiffen the palate, but conclude gracefully with a soft encore on fruit.
