Environmental sustainability, health, education: these are just a few of the missions championed by this Franciacorta winery, founded in 1979 by Teresio Schiavi, along with a group of vinedresser friends. Their work with pinot bianco, aimed at maintaining rhythm and fragrance in their cuvees, is particularly noteworthy, as is their long-standing commitment to producing wines with low or no added sulphites. The Franciacorta Dosaggio Zero Demetra '18 impresses with a profile that's both gentle and delicate on the nose yet invigorating and crunchy on the palate. Aromas of ripe lemons and helichrysum give way to a palate that showcases exquisite beading, gifting a burst of flavor due to its tension and linearity. What a drink! In stark contrast, the Demetra Pinot Nero '18 plays on sensations of ripe apple and hazelnut, with a slight touch of grape-skin on the palatea warm, flavorful drink that will pair well with the right dish. The Dom '16 is more elegant and creamy, subtler than usual, oscillating between balsamic whiffs, flowers, and spices.
