The Cantoni family's estate, whose roots go back to the early 18th century, bears a stone at the base of their house, marking the establishment year as 1707 (a testament to the property's deep agricultural past). After working around the world in industry, Giuseppe Cantoni decided to return to his agrarian roots. Today, the farm is run by his sons: Nicola (who's also the President of the Terre di Pisa Consortium) oversees the agricultural aspects, while Matteo manages the commercial side. Their efforts to revive almost extinct grape varieties, such as sanforte and colombana, are worthy of note. The Sanforte '19, made from the indigenous grape of the same same, reveals sanguine notes on the nose, then vegetal hints of tomato leaf and dark berries. The palate has weight, density, calibrated freshness, and an appetizing finish. The Ceppatella '19 features tertiary, austere hintsa mouthfilling drink and relaxed. The Vermentino '22 opts for fresh aromas of mint and lime on the nose, followed by a spirited, sapid and enticing body.
