Damiano Ciolli, a fourth-generation winemaker from Olevano Romano, views himself as a viticulturist in pursuit of perfection. For 20 years, Damiano has committed to a mission: to highlight the unique characteristics of Cesanese by focusing on biodiversity and the grape varieties used, and to bring recognition to the wine globally. His work has resulted in three wines (two reds and a white) of high value that aptly embody the distinct traits of the soil at the foot of Mount Celeste. Both their versions of Cesanese di Olevano Romano Superiore advanced to the finals. The Silene '21, with its Mediterranean scrub, juniper berry, and sour cherry aromas, makes for a succulent, lively, and fresh drink. The orange zest and spice-laden Cirsium '19 showcases red fruit in the mid-palate, leading to a sapid, fresh, yet pervasive finish. The Botte 22, a blend of trebbiano verde and ottonese, proves straightforward yet pleasant and fruity.
