In the 1980s, Fabio Cenni took the reins of the family business, imparting to this modest venture, situated outside the "official borders" of the great Tuscan Sangiovese (in Chiusi), a special charm found only in the most successful winemaking endeavors. With the 1992 vintage came the release of the first Poggio ai Chiari (the "chiari" are bodies of water near the winery's vineyards), the signature wine of Colle Santa Mustiola. From then on, it has become one of Tuscany's most refined expressions of sangiovese. The Sangiovese Vignaflavia '15 is a wine in which time seems to have stood still. Fragrant in its aromatic suite of small red fruits and underbrush, it has a lively, supple palate, with a well-sustained fruity tone. The Poggio ai Chiari '15, another monovarietal Sangiovese, has youthful aromatic traits, with balsamic herbs taking center stage before a palate of airy chiaroscuro. The Aldonem rosé sparkler, made by the "Scacchi method," is a delicious and well-contoured drink.
