San Anselmo, in Marin County, is well known for the presence of many farms in the agricultural sector. Duilio Valenti, son of Jean Valenti, founder of AIS, the Italian Sommelier Association, chef and owner of the restaurant Valenti& Co, mostly uses organic products from local farms. The eggs that are used are free range. The result is that the food is excellent thanks to the skilled hand in the kitchen that guarantees simplicity and clean flavors that are difficult to find elsewhere. Of particular interest are the cavatelli with ricotta, a dish that is extremely simple but authentically Italian, and the Milanese cutlet, cooked to perfection without being heavy. The wine list focuses on top wineries of Northern Italy.
