Leonardo Pacenti has paved the way for many Italians in the Netherlands, having moved to Amsterdam in 1985 and since becoming one of the city’s best-known and loved chefs. His cuisine is authentic – avowedly “homely” – and the atmosphere relaxed, with attention to detail. Ingredients, clean flavours and simplicity form the winning formula that has enabled Toscanini to remain on the crest of the wave after more than thirty six years. The fresh pasta is homemade like ravioli and the bread is from the Toscanini bakery, while inspiration for the classic dishes comes directly from trips to the various regions of Italy, with an eye on super fresh (and tasty) vegetables.
