After opening Torno Subito in Dubai in 2018, Massimo Bottura moved across the ocean to open Torno Subito Miami, bringing to the United States the concept inspired by the dolce vita of the Riviera Romagnola, with its colourful and light-hearted imagery as told by Fellini. Italian flavours, traditional recipes that oozes with a modern and fresh twist. We would like to point out a dish that literally captivated us: Feelin' green. A tribute to spring and to green—the dominant hue of nature and a symbol of renewal and sustainability. This vibrant dish brings together the herbaceous sweetness of broad beans and peas, merging harmoniously with the delicate iodized essence of scallop and the earthy depth of asparagus. The Agretti introduce a gently brackish, slightly sour touch that enhances the minerality of the composition. To complete the experience, smoked trout roe adds rich, enveloping notes, creating a dish that is both elegant and deeply evocative of the season. Torno Subito is un unmissable restaurant in Miami.
