The belief that you can create excellent Italian cooking abroad, but only if it’s based on quality ingredients and original recipes. No bluffs, no compromises. This was the objective of Quattro Gatti, a small, very small restaurant in Amsterdam which offers a limited menu that changes every day. Lots of cheese and vegetables, fresh fish cooked in classic ways, rather more creative hors d’oeuvres and first and second courses. The desserts, made in Quattro Gatti’s kitchen, deserve a special mention: of regional origin, maritozzi romani; they, too, are changed daily every day and can be purchased to take away.
