Within the Mercado de La Paz in the Salalamanca district is the brainchild of Matteo De Filippo and wife Chiara Guberti. The nephew of playwright and actor Eduardo De Filippo, the owner had his stint working in theatre before focusing exclusively on cooking as the Italian embassy chef in Madrid. Years later he developed the Artesano de La Pasta project, a pasta making shop with annexed restaurant. The express kitchen is in plain view, and focuses successfully on ingredient driven cookery. Think tonnarelli alla puttanesca, or fettuccine and homemade ravioli. Sweet meal endings may feature simple and delectable panna cotta or tiramisu.
