The menu depends on whatever the teams working in the fields and bakery (including pastries) bring to the kitchen from one day to the next, following the rhythms of nature and the seasons, and the freshness of the ingredients used, all while being attentive to nutrition. Ample space is given to the vegetable garden (bruschettas, purees), savory first courses (lasagna, bigoli) and guinea fowl or "veggie" burgers as main courses.
