Located within the renovated Dusit Thani Bangkok, one of Southeast Asia’s most prestigious hotels, Cannubi by Bombana now stands as one of the absolute pinnacles of Italian dining in Thailand. A recent venture, yet already perfectly refined, it bears the signature of Umberto Bombana and follows in the tradition of the most authentic and refined international Italian haute cuisine. The cuisine of Executive Chef Andrea Susto, who trained within the Bombana universe and arrived in Bangkok after working at the group’s restaurants in China, tells the story of a contemporary Italy that never forgets its roots. Most ingredients come from the Italian Peninsula, the recipes respect tradition, and the execution is always precise, clean, and measured. Among the appetizers, the magnificent Culatello Spigaroli stands out, served with 36-month Parmigiano Reggiano and sweet-and-sour vegetables—a showcase of the finest Italian cured meats. The Sicilian red shrimp carpaccio with Oscietra caviar, jalapeño, and basil oil is also exceptional, seamlessly bridging the Mediterranean and Asian culinary traditions. The first course section is a true tribute to Italian pasta. The Gentile gnocchetti with slow-braised beef ragù and Provolone del Monaco fondue represent the most indulgent and comforting side of the restaurant’s cuisine, while the homemade chitarra with Alpine cheese fondue and black truffle plays on richness and aromatic intensity.

For those seeking a more regional and contemporary take, the Riserva San Massimo risotto with Yunnan mushrooms and buffalo ricotta demonstrates how ingredients from different worlds can coexist harmoniously. The main courses showcase the kitchen’s mastery in working with raw ingredients, as evidenced by the roasted beef tenderloin with braised cheek, morel mushrooms, and brown stock—a dish of great depth of flavor. The front-of-house service, led by professionals who also hail from the Bombana experience in Beijing, stands out for its precision, expertise, and natural ability to guide guests through the entire dining journey. But it is likely the wine list that places Cannubi in a league of its own. One of the most comprehensive and fascinating selections dedicated to Italian wine in all of Asia, built not only through a vast selection of labels, but above all thanks to a structure that describes regions, appellations, and producers with rare clarity.
