A great start for Carmine Amarante, one of the most talented Italian chefs abroad on a technical level, who had already placed himself in excellent light in his very positive experience with Heinz Beck. A few months after his arrival, the menu already shows a clear change of pace in terms of identity and the complexity of flavours. In particular, pastas such as linguine with broccoli creams and clams are perfect; the tortello alla genovese is very tasty and well played and finally strawberries with mascarpone, spuma and cantucci ice cream is delicious. The classic saffron risotto, present in all Armani restaurants around the world, has also been improved. If these are the first steps, just three months after the opening, things are looking good: Armani today is already among the best Italian restaurants in an extremely competitive scene like Tokyo.
