Johnny Di Francesco has brought a slice of Italian flavour to Melbourne. In fact, in his pizzerias, traditional dishes such as meatballs, fried and stuffed olives Ascolane and Amatriciana are served side by side with pizzas. The pizzas are faithful to the art of Naples, with a high level of hydration of the dough. The proposal is varied and generously picks among classic recipes, with the use of ingredients directly from Italy. The Margherita is worth trying, but those who love strong flavours will certainly like Arrabbiata, topped with San Marzano tomatoes, mozzarella, red onions, chilli, spicy salami and olives.
