First of all cut all the ingredients: bacon, bread and speck into cubes. Place the chopped ingredients in a bowl. Continue by cutting the chives with a knife (do not use a blender or it will taste bitter). Continue cutting the parsley, avoiding cutting the stalk (which you will use for other recipes). In the meantime, put on a pot with the broth and bring to a boil. Now pour some milk in the bowl with the bread and start to work it, and then gradually add the other chopped ingredients. Then add the eggs and knead the dough. Add the sifted flour a little at a time and the nutmeg, then knead the mixture. Start making balls with the dough. Put some flour on the workbench. At this point the knödel should be cooked in a boiling pot for 20 minutes. Once the twenty minutes have passed, serve the knödel with broth.
