Casa Modena zampone is made with a mix of lean cuts of head and leg, fat and throat rinds of national pigs; the tanning, in addition to salt, spices and natural flavourings, contains sugar and Marsala. No added gluten or polyphosphates. The appearance is bright pink tending to red, both the rind and the mixture, finely ground with the right balance between fat and lean. The spiciness is pleasant and very well balanced, with cinnamon giving a sweet and warm nuance and pepper (in whole grains) giving freshness
