In appearance their spuma is similar to a chinotto or a degassed cola, with very subtle and prickly bubbles. Both aromatically and in the mouth its affinity with chinotto is quite evident: there's a certain bitterness, delicate but persistent, well-calibrated sweetness, and signature citrus notes (of cooked fruits). There's also caramel, which takes us back to the original spuma. Nice balance of bitterness and sweetness, good intensity and above all notable persistence of flavor.
