This is a classic pecorino, just the way native Romans like it: tough, powerful and characterful - robust in its flavor. Straw-yellow in color, its texture is granular and compact. The nose is complex and pervasive, rich in fresh milky notes, herbaceous and floral hints, all adorned by slightly toasty whiffs of nuts. In the mouth we can perceive that signature, bold savoriness that's so common to traditional Roman cooking. It's a quality, however, that's never excessive, but rather lengthens the cheese's flavor - nor does it suffocate its other lovely aromas. Perfect both for the table and for grating.
