The purée, whose only other ingredient is a pinch of salt, is appealing to the eye: clean and free of seeds or skin (thanks to a special system patented by Ciro Flagella). Its color is vivid, its consistency supple and compact. Pleasant when uncooked, it maintains its qualities even after heating: delicate and harmonious, with the right acidity and the authentic flavor of fresh tomato.
