His strawberry tree honey, harvested in the countryside of Austis (on the west side of the Gennargentu at an elevation of 750 meters), has a pasty, smooth and even consistency accompanied by fine crystals, making it enjoyable on the palate and as a spread. It impresses both the eye and nose with its light color and consistent aroma, where trademark toasty notes meet coffee, grass, sap, a hint of burnt leather, gentian and bitter almond. In the mouth it's fresh and responsive, but also delicate.
