Their guanciale is made with 100% Italian pork. A mix of salt, spices and natural aromas flavor the pork cheeks, which are cured for 30 days, making for a highly characteristic and territorial product. A nice layer of pepper envelops the meat. Aromas of spices meet wine, nuts, citrus fruits, wood and mushrooms. In the mouth it's balanced, sweet and properly savory on a backdrop of flavors that mirror its aromas.
