The anchovies are from Sicilian waters, processed on the island when freshly caught. The EVOO is Tuscan. The selection, filleting and final cleaning, seasoning and packaging in glass jars are carried out in Piedmont. This is the creation process of Sapori d’a Mare anchovy fillets in EVOO. The company was founded over a year ago by Edoardo Sibona and Enrico Giombini. The fillets are processed with traditional Piedmontese anchovy methods, and are available plain, with chili pepper, with salsa verde, and the most recent version is with chives.
