Founded in the 1980s as a company selling fresh foods in Valtellina, Caiolo later began a niche production of typical local charcuterie and then expanded to the Chiuro plant. Today this is a large-scale business which does not, however, overlook raw materials: beef, pork, horse, and game purchased on national and international markets according to the type of product (bresaola, cured ham, local charcuterie).
