It was here, in a small hamlet in Pollino National Park, that Enrico Fanelli and Maddalena Guerrieri started MAB, a small food producer that features peppers, a local speciality. Care is taken that the peppers are harvested at the right moment. Then they are sun-dried and finally fried in hot oil. The final step is to vacuum seal them in jars or bags. From there they can be enjoyed as a snack, with a glass of wine, as a garnish or on pasta. They’re also available in powder form.
