Since 1948 the Fiandino dairy has been interpreting the art of cheese in Cuneo territory. Alongside traditional cheeses, the dairy offers more innovative types made with vegetable rennet. Milk, mainly from Italian Bruna Alpina and Piedmontese cow breeds, raw or pasteurized depending on the type of product to be made, comes in part from the farm’s own stock, and in part is purchased in the Cuneo countryside. Production includes butter; Malga (an Antica Grangia toma); Grana Padano (aged 14–24 months); Selezione Fiandino, with a minimum of 20 months ageing.
