Carpenedo is a family company that began selecting and ageing cheeses in 1976 when the first of the products ripened in wine and marc came about, named Ubriaco, meaning drunk. Today there are several hundred items in the catalogue, comprising different lines, from regional specialties from all over Italy, from Val d’Aosta Fontina to Sardinian Pecorino, to “cellar cheeses”, with dozens of imaginative types, including cacioradicchio, caciobirraio, conciato al pepe with its pepper dressing. There are also classic products, like butter and casatella.
