This is a small artisan ham production business with limited quantities sold to gourmet stores and high-end restaurants. Healthy fresh air, prestigious ingredients (large, selected thigh joints from farms around Mantua and Brescia included in the PDO zone), careful processing, well-judged salting and lengthy maturation (between 14 and 24 months) are Il Camarin’s strong points. The company produces DOT San Daniele and Dolcenero, a San Daniele matured for 36 months, a “super riserva” that is not for sale but can be tasted in the family restaurant.
