This young pasta maker, founded just two years ago in Irpinia (Campania), focuses on silver and platinum-drawn pasta, producing specific ‘Selezioni’ as well as traditional bronze-drawn varieties. The flours used are a mix of Italian durum wheat from Campania and Puglia, including the prized Senatore Cappelli, which features in their wholewheat pastas. Their production approach is artisanal, with slow drying at low temperatures (around 40°C). Recently, they also created a fourth line of pastas, smaller in size and dedicated to children.
