Giacomo Santoleri is an engineer who decided to become an organic farmer on the slopes of Mount Maiella. The pasta has always been original, from the initial spelt spaghetti made in 1993. Tasty artisanal pasta, made as Nature commands, in refined tobacco colour packs, with a dash of colour from the Casino di Caprafico logo. In 2001 the durum wheat and barley Ma’kaira line of pasta in chitarra and linguine versions, bronze-drawn and dried at a maximum 45 °C. Since 2006 it is also available in spelt and barley versions.
