Nicola Mercurio has organic certification for his farm and used artisanal processes to preserve vegetables of great quality, starting with peeled tomatoes and tomato purée from crops picked by hand at the right ripeness, processed without acidity regulators and preservatives. Also on offer, a tempting range of vegetables in oil like courgettes, green beans, turnip greens, cauliflower, fava beans, aubergines, mixed vegetables, and peppers, but also chillies stuffed with tuna and wild asparagus cream.
