Founded in 2015, Artigianquality is the only artisanal mortadella producer that operates in Bologna, a city that’s synonymous with this enticing deli sausage meat. No frozen or foreign meats are used, nor pork from intensive farming, rinds, dairy products, polyphosphates, artificial flavorings or allergens. Here you’ll only find pork from local farms respectful of animals, spices, fresh PDO Voghiera garlic, artisanal production methods and lengthy cooking times. Various versions of mortadella are offered: their classic, Slow Food Presidium mortadella, a version made with the Mora Romagnola pig, organic, pistachio and truffle.
