Today Paolo Vecchi, whose passion for food goes back to early childhood, is at the helm of this historic family-run producer that makes high-quality balsamic vinegar with their own grapes. Aceto Balsamico di Modena PDO ‘extravecchio’ is their crown jewel, but their PGI Balsamic (available in both ‘gold’ and ‘black’ varieties) is just as good.
