Tenuta di Carma
Giulio Figarolo di Groppello and Gianluca Pizzo run the Tenuta di Carma, an organic farm founded in 1985, extending east of Lake Bolsena. The 20 hectares of olive groves are planted on clayey land at an altitude of 400 metres, with 5,200 trees of the typical northern Lazio varieties. The olives are hand-picked between October and November, and processed in the estate’s own state-of-the-art mill, with temperature-controlled pressing and nitrogen-sparged storage.
