Romina Salvadori oversees Il Cavallino, a property situated on the magnificent coast that stretches south of Livorno. The olive grove unfolds across 55 hectares (27 of which are organic) and hosts about 16,000 trees. They also produce pâtés and a line of cosmetics based on extra virgin oil.
