CaVi (the name derives from the initials of two grandfathers, Carlo and Vincenzo) is an ambitious project that combines various skills to create "high-quality" EVO. The oil is obtained from olives of the native Ogliarola Garganica cultivar, drawing on partly owned trees (about 850 across 4 hectares) and partly sourced.
