With over 200 hectares of estate, at least 10,000 metric quintals of paddy rice are grown each year, but only a small part is refined and marketed under the company name. The flagship Carnaroli has PDO Riso di Baraggia Biellese e Vercellese certification, as do the Arborio, Sant'Andrea, Balilla and Baldo rice, but not its red and black rice, produced in small quantities. As well as being packed with vitamin B, mineral salts, amino acids and antioxidants, its wholegrain Nero di Baraggia Otello cultivar contains amylopectin, which speeds up cooking and stops the grains breaking up.
