A long-established business that has been processing tuna for decades. It offers three product lines: Auriga for tuna, including filets, and anchovies; San Cusumano (named after the district where the ancient Castiglione tuna-processing plant stands) for tuna in brine and in oil, belly tuna, tuna botargo powder, mackerel and salmon (also smoked) filets; Specialità including Mediterranean bluefin tuna and yellowfin tuna botargo; milt; air-dried yellowfin tuna filet called mosciame; tuna salami and heart. A new line is dedicated to tinned walleye pollack.
