Massanera is a fine Chianti Classico estate surrounding a villa, which began life as a hunting lodge for Florentine nobles, before becoming a farm in the 18th century. Here Carlo Cattaneo produces wines, grappa, EVOO, and excellent charcuterie, made from his own herd of Cinta Senese pigs. The additive- and preservative-free meat products, made by a butcher who is also a friend, are typical of Tuscany's charcuterie tradition: ham, salami, finocchiona, cured pork fat, flat and rolled pancetta, gota, capocollo and filetto.
